We are a small business that offers Big, full flavor off a Food Truck that make those Italian based dishes that remind you of home and Family. Like Meatballs, Sausage and Peppers, Raviolis, Chicken or Eggplant Parmesan. All covered with our traditionally cooked red sauce. We cook with a inventive flare and offer dishes we grew up with as kids, that will a smile on your face. We Currently cook for small events, and offer our menu to places that don’t offer food, but want their taste buds satisfied. Sunday at the dinner table was like church to us and if you weren’t there it was a sin. So Growing up as a kid in my house with a Dad that was a GREAT Cook and all the other family members that would take me under their wing and show me the ropes on how to make an ok dinner an outstanding meal. Years later working all kinds of food jobs and being the NY artist, I fell in love and married my Wife Christina and then moved to Raleigh NC. Jobs were few and far between and I wanted to do something I loved and was passionate about so why not give a cooking career a shot and open a business? Not having the money for a full scale place I tried to keep it simple, artistic and cool. So after a year or research and five months of hard work and help from my brother. We build an Italian food grade kitchen on wheels out of a 89 Grumman KurbmasterI lived most of my life in NY with my family. I am not a chef by any means, but I am a Cook/Artist, so I create the great eats I grew up with. But I add my own personal flare. I like to say I went to “Sunday School” because every Sunday in my home there was some Big Meal cooking. If you missed church, the Family would let it slide, BUT Not Sunday Dinner! We would cook in bulk since 30 people could show up in a heart beat. There was alway a slow 10 to 14 hour cooked sauce as a base and within it could be braised meats or fish. Hand Made pasta, fresh greens or seasonal veggies, plus something baked and a touch of heated peppers came with the meals. It’s passion and love like this I have learned from my famiy and close friends in which I bring to my food truck.
